- Carrots are an excellent
source of antioxidant compounds and the richest vegetable source
of the pro-vitamin A carotenes. Antioxidant compounds found in
carrots help to promote good vision and protect against cardiovascular
diseases and several cancers—lung cancer.
- Vitamin A helps maintain a healthy immune system. It is needed
for healthy epithelial cells that line every organ in the body,
including the outer skin. It also stimulates enzymes that repair
damaged DNA.
- Beta-carotene and other phytochemicals in carrots enhance cellular
communication that stops abnormal replication of neighboring
cells (cancer).
- Taking a beta-carotene
pill alone is not enough to fight cancer. Just eat 1 oz. of
carrots. This meets 110% of an adult’s
RDA for vitamin A. It meets 330% of a child’s RDA (Recommended
Daily Allowance). Raw carrots are the best!
- The fiber in carrots prevent their natural sugar from rushing
into the bloodstream and causing an insulin spike.
