In 1998,
I had a "Pride of New York" Harvest Kitchen built to preserve
foods from my garden and my neighbor's crops--a summer kitchen like I remembered. At first I copied what my mother made in our farm kitchen, but everyone was making jam and pickles for the farmers market. How could I be different!
I was inspired by a Cornell 1960 college memory where my professor vacuum packaged a chicken.
I wondered if I could freeze and vacuum package fruits and vegetables. Indeed I discovered that I could
1. Make frozen fruit sauces with much less sugar than jam.
2. Try new fruit and vegetable combinations since freezing extended the season. I could mix June strawberries with peaches in August.
T. Colin Campbell, Cornell Nutrition Professor, in his 2004 book The China Study, discovered that a diet consisting predominantly of whole grains, vegetables and fruits reduced the incidence of nutrition related diseases. If we preserve foods as we harvest, we can design and freeze a whole foods diet that is healthy and affordable using New York dairy, meat, vegetable, fruit and grain products.

Training & Presentations!
We also want to train others to duplicate what we do. I can custom design a presentation for your community group and demonstrate the possibilities. You can taste the results.

DIRECTIONS:
From the North, West or East:
Take either I-90 or the NY Thruway to Exit B1 to Rt. 9. Turn right onto Rt 9. from the North or West and head south to the Kinderhook stop light. From the East turn left onto Rt. 9. Continue south to Kinderhook. At the stoplight continue south to Eichybush Road, the second road on the right, after the light.
From the South:
Take 9H into Kinderhook. Turn right by the Elk's Hall and right again to go under Rt. 9H. Cross the Kinderhook Creek and proceed west to the only stop light in Kinderhook. At the light turn left to go south onto Rt. 9. Take the second right after the light onto Eichybush Rd. and drive to 362 Eichybush Rd..
